Bake chicken breast (crockpot style if you're gone), skin it, bone it, then slice or chop into chucks. In hot skillet, add dab oil; toss in 1 sliced medium onion, a crushed single lump of garlic, and slivers of bell peppers. Saute until aroma makes the house smell good. Add chicken, keep stirring. Now the cheater's part. Add several splashes of liquid smoke (maybe a dab of Worcestershire) to taste. Cover, simmer, and stir; maybe add more liquid smoke until well heated. Serve with warm tortillas.
Note: Leftover roast will work but I'm partial to chicken. It's a sneaky way to fix leftovers.
