HOMEMADE ITALIAN TOMATO SAUCE 
Ahh nothing like fresh homemade tomato sauce! The key is to slowly cook your sauce til it reduces 2/3 it's original state.

1 large onion, chopped
4 cloves crushed garlic
2 (28 oz. ea.) cans peeled plum tomatoes
1 tbsp. Italian seasoning (or basil, parsley & oregano)
2 tbsp. extra virgin olive oil (EVOO)

Start with a nice large pot with a thick bottom. Heat your EVOO then add your chopped onion. slowly cook your onions til they are translucent. This is key for that sweet onion flavor! Now add your crushed garlic. Cook that up about a minute or so, stirring til you smell the garlic. Now add your tomatoes.

I hand crush my tomatoes, but you can just crush it up in the pot with a wooden spoon... no matter, we will be cooking these tomatoes til they become a sauce.

Now bring it to a slight boil, reduce heat. You don't want the sauce to boil. You want to slow simmer this. Add some salt and pepper.

It will take about 2-3 hours to get that great sauce but it will be worth the wait... trust me. So all the while let all those flavors melt and merry each other, while you stir it ever so gently occasionally.

The last 15 minutes or so you can add you herbs.

Your Homemade Italian Sauce will be ready when you taste it and your mouth says oh yeah!
