RICKI'S CHICKEN FAJITAS 
2 boneless chicken breasts
1 green pepper
1 onion
1 sm. can can stewed or diced tomatoes, drained
Low fat sour cream
Salsa
Low fat Mozzarella or cheddar cheese
1 pkg. (8 or 10) flour burritos

Saute cut up chicken in 1 tablespoon olive oil with dash of salt, pepper, 1 clove minced garlic and 1 teaspoon hot sauce. Add sliced pepper and onion and dash of cinnamon. Cook 5 to 10 minutes, tossing like a stir fry. Assemble salsa, sour cream and shredded cheese. Prick bag with burritos with fork (leave in bag). Microwave for 1 minute. Immediately wrap in towel (must stay moist). Make burrito by layering chicken, cheese, sour cream, salsa, wrap and eat. Serves 4 to 6.

If you have leftovers, make up burritos. Wrap tightly in cling wrap. Refrigerate. Next day heat in microwave for 1 minute.

Since microwave ovens vary in power, you may need to adjust your cooking time.
