CRAWFISH FETTUCINI 
1 lg. onion
2 stalks celery
1 bell pepper
Parsley
Garlic
1 stick butter
1 tbsp. flour
1 1/2 to 2 lbs. crawfish
4 oz. Cheez Whiz, regular
4 oz. Cheez Whiz, Jalapeno
1/2 pt. half & half
8 oz. egg noodles

Chop onion, celery, pepper, parsley and garlic. Boil 1/2 pound medium egg noodles until tender with salt, drain and rinse in cold water. Saute onions, pepper and celery in 1 stick of butter until soft. Add flour, parsley and crawfish. Cook about 15 to 20 minutes. Add both kinds of cheeses, add garlic and half & half. Cook for another 15 to 20 minutes. (Low fire or cheese will stick.) Fold in noodles into sauce. Pour into casserole dish. Optional: Sprinkle with Parmesan cheese. Bake at 350 degrees for 15 minutes.
