VIDALIA ONION CASSEROLE 
4 med. onions, sliced
12 saltine crackers, crushed
1 can cream of celery (or chicken soup)
1 c. grated sharp Cheddar cheese
2 eggs
1 c. milk
Salt & pepper to taste
2 tbsp. butter

Saute onions in butter; set aside. Line buttered casserole dish with crackers, saving a few for the top. Arrange onions in bottom of dish on top of the crackers. Beat eggs; add milk, soup, salt and pepper to taste. Pour over top of the onions. Sprinkle grated cheese and remaining crackers over the top. Bake at 350 degrees for 30 minutes or until lightly browned and bubbly.
