JAMIE'S SPAGHETTI SAUCE &
MEATBALLS
 
2 (15 oz.) cans tomato sauce
2 (10 1/2 oz.) cans tomato puree or whole tomatoes
2 (6 oz.) cans tomato paste
2 tsp. oil
1/2 c. water
Fresh or canned mushrooms
Garlic, onion, parsley, oregano to taste
Bay leaves
Salt, pepper & red pepper to taste
2 lbs. ground beef
4 slices bread crumbs
1/2 c. Romano grated cheese
4 eggs
Salt, sage, thyme, sweet basil

SAUCE: Simmer 1/2 hour to 5 hours, adding more water as needed. Add 3/4 teaspoon baking soda to sauce, this cuts down on acid. Stir in slowly and simmer for 15 more minutes. Can be frozen.

MEATBALLS: Mix together seasoning to taste. Roll into balls and fry. Can also be used as stuffing for ravioli. Leave mixture loose and fry, then stuff into ravioli dough. Can be frozen.
