M.'S MEATY MEATBALLS AND SPECIAL
SPAGHETTI SAUCE
 
1 (16 oz.) can Italian tomatoes, peeled
1 (8 oz.) can tomato paste
1 sm. finely chopped onion
1/2 stalk celery, finely chopped
4 oz. Mozzarella cheese, cut up or shredded
1 tbsp. Romano cheese, grated
1 tbsp. Parmesan cheese, grated
1/2 tsp. each basil, oregano and ground garlic (or 2 fresh garlic buds peeled)

Combine above ingredients in a large pot. Simmer 2 hours or more. Add salt and pepper to taste. Add a dash of sugar if needed. If thinner sauce is desired add 4 to 8 ounce water. Stir often.

MEATBALLS:

1 lb. ground beef
1 egg
1/2 c. bread crumbs
1/4 tsp. basil, garlic, oregano
1/2 tsp. Parmesan and/or Romano cheese
Salt if desired

Mix together above ingredients except ground beef, this mixture will be paste like. Add ground beef, shape into meatballs. Brown in 1/2 inch of oil. Add meatballs to sauce and continue to simmer for 1 1/2 hours or longer. Stir often. Tastes great with thin spaghetti and garlic bread.
