BANANA "SPICE" CAKE WITH SEA
FOAM FROSTING
 
2 1/2 c. sifted cake flour
1 2/3 c. sugar
1 1/2 tsp. cinnamon
3/4 tsp. ground cloves
1/2 tsp. nutmeg
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2/3 c. shortening
2/3 c. buttermilk
1/4 c. mashed real ripe bananas
1 banana, sliced
2 eggs
Optional: 2/3 c. chopped walnuts
Sea Foam Frosting, recipe follows

Sift dry ingredients into a large mixing bowl. Add shortening, buttermilk and bananas. Mix until all the flour is dampened. Beat at low speed for 2 minutes. Add eggs, beat 1 minute.

Turn batter into two 9 inch greased and floured layer cake pans. Bake in a moderate oven, 350 degrees, for 30-35 minutes or until cake springs back when lightly touched. Cool cake completely.

Spread Sea Foam Frosting between layers. Top with banana slices. Put layers together. Frost rest of cake with Sea Foam Frosting and spoon melted chocolate-butter mixture into swirls.

SEA FOAM FROSTING:

2 egg whites
1 1/2 c. brown sugar, packed
5 tbsp. water
Dash of salt
1 tsp. vanilla
Chocolate pieces
Butter
