HEALTHY PIZZA BAKED SPAGHETTI | |
1/2 cup lentils 1/2 (16 oz.) box whole wheat spaghetti 2 cloves garlic 1 jar favorite spaghetti sauce 3 tbsp. grated Parmesan cheese 25 pepperoni slices 1 1/2 cups part skim Mozzarella cheese Boil lentils until tender. Boil spaghetti until tender. Drain lentils and puree in food processor until smooth. In a 8x8-inch casserole dish spray with non-stick cooking spray (Pam). Mince garlic and spread in bottom of casserole dish. Mix 1 cup of spaghetti sauce to lentils and spread on top of the garlic. Sprinkle on the Parmesan cheese. Microwave pepperoni for 30 seconds and dab off any extra grease. Layer the pepperoni on top of the lentil mixture. Add drained spaghetti and remaining spaghetti sauce. Spread Mozzarella cheese on top and bake at 350°F until bubbly. about 15 to 20 minutes. Submitted by: Bethany |
