MINCE CHEESECAKE PIE 
1 (9") unbaked pastry shell
1 (27 oz.) jar None Such ready to use mincemeat (regular or brandy & rum)
1 1/2 tsp. grated orange rind
2 (3 oz.) pkgs. cream cheese, softened
1/2 c. sugar
2 eggs
1 tsp. vanilla extract

Place rack in lowest position in oven; preheat oven to 425 degrees. Combine mincemeat and 1 teaspoon rind; turn into pastry shell. Bake 15 minutes. Meanwhile, in small mixer bowl, beat cheese and sugar until fluffy. Add eggs, vanilla and remaining 1/2 teaspoon rind; mix well. Pour over mincemeat. Reduce oven temperature to 350 degrees. Bake 25 minutes longer or until set. Cool. Serve warm or chilled. Garnish as desired. Refrigerate leftovers.
