NO - FAT CHEESECAKE (DAIRY) 
2 c. nonfat cottage cheese
1/4 c. nonfat plain yogurt
1 egg white
1/4 c. orange juice concentrate (defrosted frozen)
1/3 c. apple juice concentrate (defrosted frozen)
1 tsp. vanilla extract
Grape-Nuts pie crust

In a blender or processor (easier), blend cottage cheese. Then add yogurt, egg white, orange juice concentrate, apple juice concentrate, and vanilla extract and blend until smooth. Pour over pie crust and bake 20 minutes at 350 degrees. Chill and serve with your choice of fresh fruit as topping (strawberries, blueberries, cherries).

GRAPE-NUTS PIE CRUST

Mix 1 to 2 cups Grape-Nuts cereal with 1 to 2 tablespoons apple juice concentrate. When Grape-Nuts (can also use Perkys Nutty Rice cereal) are a little wet, pat the mixture into the bottom of a 9 inch pie pan, evenly. Bake in 350 degree oven for 10 minutes and allow to cool 10 minutes before pouring cheese on. The more cereal and juice concentrate is used, the more calories the dessert contains. Use 1 cup and 1 tablespoon to start. Makes 8 servings. With fruit topping it has approximately 105 calories per serving. Not bad!!
