CHILI SAUCE 
2 1/2 gal. Roma tomatoes
6 onions
6 green peppers
3 red peppers
6 stalks celery
8 c. sugar
1 tsp. pepper
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. ginger

Peel tomatoes, then chop all. Add 1 cup salt. Soak overnight. Next morning, drain. Add all spices and 1 quart vinegar. Cook 45 minutes. Process in water bath for 15 minutes.
