FRIED RICE 
2 c. cooked white or wild rice
3 med. carrots, chopped
4 lg. green onions or 1 lg. white onion, chopped
1/4 c. chopped green pepper
2 c. cooked meat (pork, beef, shrimp or chicken)
2 eggs, beaten
1/4 c. cooking oil
Soy sauce to taste
Salt and pepper to taste

Allow cooked rice to stand in covered container in order to dry. In a large hot skillet, saute carrots, onions and bell pepper in oil. Occasionally sprinkle with soy sauce until tender. Add meat and more soy sauce until hot. Add rice and stir until all ingredients are thoroughly mixed.

When mixture is heated, pour beaten eggs over top, cover and let simmer on low heat for 5 minutes. Stir well before serving.
