FRIED CHITLINS 
pork chitlins, boiled
1 c. self-rising flour
1 tsp. black pepper
2 tbsp. oil or vegetable cooking spray (to coat skillet)

Coat the chitlins in the flour and pepper mixed together. Place them in the oil in a skillet over medium heat. Cook slowly, about 10 minutes on each side, turning until crispy and brown all over. Drain on paper towels.
