FATHER'S FAVORITE LEMON MERINGUE
PIE
 
4 egg yolks
1 1/2 c. sugar
1/2 c. cornstarch
Grated rind of one lemon
1/3 c. lemon juice
2 c. boiling water
1 tbsp. butter, (sweet preferred)
1/8 tsp. salt

Combine sugar, cornstarch and lemon rind. Add boiling water. Cook until it begins to thicken. Turn off fire and cool stirring constantly for five minutes. Add egg yolks, lemon juice and butter. Cook on low flame for five minutes. Turn into baked pie shell. Bake at 325 degrees for fifteen minutes. Yields one nine inch pie.

MERINGUE
4 egg whites
1/2 c. sugar
1/8 tsp. baking powder

Beat egg whites until stiff. Add sugar and baking powder. Beat until glossy. Pile in peaks on pie and bake 15 minutes at 325 degrees. Do not cook fast. Check pie in ten minutes.
