FAVORITE BANANA CREAM PIE | |
3 tbsp. flour 2 egg yolks Butter size of walnut 3/4 c. sugar 2 c. milk Bananas Mix flour and sugar together thoroughly. Add little milk to yolks and beat thoroughly. Gradually add rest of milk and flour-sugar mixture, stirring constantly so it thoroughly dissolved. Cook until thick, stirring constantly. Remove from heat, cover and cool. When ready to serve add 3-4 bananas (cut up) in cooled mixture and pour into baked pie shell. Let set for an hour or so. Top with whipped cream and serve. (Works fine as a filling for tart shells.) Prepare pie crust, roll out and cut rings (I use coffee can cover to form ring), put on muffin tins turned upside down and pinch in 4 places to form shell. Bake at 400 degrees for 8 minutes. Watch closely so they don't get too brown. |
