MY FAVORITE PIE DOUGH - 2 CRUST 
1 c. butter
2 1/2 c. bread flour
1/4 to 1/2 c. water

Cut butter into flour with 2 knives to the size of marbles. Then, rubbing hands together "sheet" the dough to make flat pieces. Don't overwork! Stop before you think you should!

Make a hole, pour in water. Mix with spoon JUST until incorporated. Divide into two and roll to make 2 crusts.
