CHOCOLATE MINT ICING 
3 tbsp. butter
1 tbsp. heavy cream (use can milk)
1 c. confectioners' sugar
3/4 tsp. peppermint extract
1 (1 oz.) sq. unsweetened chocolate

Combine 2 tablespoons of butter, cream, sugar and peppermint extract and frost cake. Chill until firm. Then melt chocolate with 1 tablespoon butter and drizzle over white frosting.
