POTATO CHEESE SOUP 
3 med. potatoes
1 onion
1 c. boiling water
Milk
3 tbsp. melted butter
2 tbsp. flour
2 tbsp. parsley
3/4 tsp. salt
Dash of pepper
1 c. shredded Swiss cheese

Cook potatoes and onions in salted boiling water until soft. Mash slightly or mix with electric mixer. Do not drain water.

Measure mixture and add enough milk to make a total of 5 cups. Heat slowly. Mix melted butter, flour, parsley, salt, and pepper until smooth. Stir into potato mixture. Cook and stir until soup thickens. Stir in cheese.
