ITALIAN MEATBALLS 
1 lb. ground beef
1/2 c. fine dry Italian bread crumbs
1 clove garlic
2 tbsp. chopped parsley
2 tbsp. Parmesan cheese
2 tbsp. salad oil
1 1/2 tsp. salt
1/8 tsp. pepper
2 well beaten eggs

Mix all ingredients together. Shape into 1 inch round balls. Simmer in your sauce for 1/2 hour to 45 minutes. Before serving, drain off fat that will rise to top.
