LEMON BARBEQUE CHICKEN SALAD | |
2 c. chicken or turkey, cut up and chilled 1 tsp. lemon juice 1/2 tsp. salt 2 c. rice, cooked and chilled 2 lg. stalks celery, sliced (about 1 1/2 c.) 1/2 c. pimento-stuffed olives, sliced Barbeque Dressing 3 tsp. bacon-flavored vegetable protein chips Sprinkle chicken with lemon juice and salt. Add rice, celery, olives and barbeque dressing; toss. Sprinkle with protein chips and garnish with parsley sprigs. Makes 5 servings. |
