LEMON CHICKEN SALAD 
1 1/2 lb. boneless skinless chicken (breast)
1 can artichoke hearts in water
2 c. slivered carrots
2 tsp. whole gratined Dijon mustard
1-2 tsp. oregano
1-2 tsp. garlic
3/4 c. lemon juice
1/3 c. olive oil
1 1/2 c. low cholesterol pasta sm. shapes creamettes are one
Salt & pepper

Steam chicken with lemon juice (don't over cook). Steam carrots. Cook pasta al dente. Slice artichokes. Mix chicken, carrots, pasta and hearts. Toss with dressing.

DRESSING:

1/2 c. lemon juice
1/3 c. olive oil
2 rounded tsp. Dijon mustard to taste
Oregano, garlic, salt & pepper to taste
