LATKAS 
8 potatoes
3 egg whites
1/4 c. flour
1/2 sm. onion, grated
Salt and pepper

Grate potatoes in food processor. Drain and run cold water over them until it runs clear. Add onion, flour, salt, and pepper; mix well. Form into patties. Drop into hot oil using a large spoon; fry until brown. Serve with applesauce.
