SWEET-SOUR RED CABBAGE 
3 tbsp. butter or bacon fat
8 c. shredded red cabbage
1 c. water
2 tbsp. sugar
1/8 tsp. pepper
1/2 c. chopped onion
1 apple, peeled and diced
3 tbsp. cider viengar
1 tsp. salt

Melt butter or fat in heavy saucepan; saute onion 5 minutes. Mix in the cabbage; cover and cook over low heat 10 minutes. Add remaining ingredients. Cover and cook over low heat 30 minutes or until done to taste. Serves 4-6.
