ZUCCHINI NUT BREAD 
3 eggs
1 c. oil
2 tsp. vanilla
3 c. peeled, grated raw zucchini
1/2 c. brown sugar
1 2/3 c. granulated sugar
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. cinnamon
1/2 c. nuts

Beat 3 eggs until foamy. Add and mix oil, vanilla, raw zucchini, brown sugar, and granulated sugar. In separate bowl, sift together flour, salt, baking soda, baking powder, and cinnamon. Add to first mixture. Add nuts. Pour into 2 regular sized greased loaf pans. Bake at 325 degrees for 1 hour. Remove from pans at once. Freezes well.
