ZUCCHINI NUT BREAD | |
3 eggs 2 c. granulated sugar 1 c. vegetable oil 2 c. peeled, grated zucchini 3 tsp. vanilla extract 3 c. all purpose flour 1 tsp. salt 1 tsp. baking soda 3 tsp. ground cinnamon 1 c. coarsely chopped nuts (walnuts or filberts) Beat eggs until light and fluffy. Add sugar, oil, zucchini, and vanilla and mix lightly. Add sugar, oil, zucchini, and vanilla and mix lightly. Combine flour, salt, baking soda and cinnamon in a separate bowl. Add to wet mixture. Mix well. Add nuts. Mix well again. Pour into greased loaf pans. Bake at 350 degrees for about 1 hour, or until center tests done. |
