SWEET PICKLES COMMERCIAL 
2 lbs. salt
2 3/4 gal. water

Soak 5 gallons cucumbers in above brine, about 10 days, wash, cover with vinegar and 1 ounce of alum. Leave in this for 10 days.

15 lbs. sugar
1/2 gal. vinegar
1 tsp. pickling spices to each gal.

Heat the above. When cold pour over pickles, let stand a day. Drain the solution off and heat again, when cold pour over pickles. Repeat this for 3 days, at last add 1 ounce of Benzoate of Soda dissolved in 1/2 cup warm water. Don't need to seal.
