TWICE BAKED POTATO 
2 baking potatoes
1/4 c. light cream or milk, warmed
4 tbsp. (1/2 stick) butter, melted
1 tbsp. parsley
2 tbsp. chives
Salt & pepper
1 tbsp. grated Parmesan cheese

Scrub, dry, prick potatoes and bake in 425 degree oven for 1 hour. Cut top 1/3 of potato and scoop meat out into large mixing bowl. Blend in mixture of ingredients except Parmesan cheese to sprinkle tops. Stuff shells of potatoes. Bake 15 minutes. Recipe can be done in multiples; ie: double for 4, quadruple for 8, 5 times recipe for 10 potatoes, etc.
