TWICE BAKED POTATOES 
4 med. white potatoes, already baked in microwave 5 min.
1 c. shredded Cheddar cheese
1/3 c. milk
1 egg
2 tsp. butter
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. paprika

Cut top of potatoes. Scoop out potato centers. Put in dish and mix with cheese, milk, egg, butter, salt and pepper. Beat at medium speed until smooth. Spoon an equal amount of potato mixture into each potato shell. Sprinkle with paprika. Arrange on microwave safe dish. Microwave on high for 5-6 minutes. Rotate once.

Since microwave ovens vary in power, you may need to adjust your cooking time.
