TWICE BAKED POTATO 
4 med. potatoes
1/2 c. sour cream
1 oz. blue cheese (crumbled)
1/4 c. milk
4 tbsp. butter
3/4 tsp. salt
pepper
bacon bits

Rub potatoes with shortening and bake 1 hour in 400 degree oven. Cut off tops of potatoes. Scoop out, mash, stir in sour cream, cheese, milk, butter, salt and pepper. Beat with mixer until fluffy. Spoon mixture in skins and put on baking sheet. Bake for 15 minutes. Sprinkle bacon bits and serve. Serves 4.
