SEVEN LAYER SALAD 
1 med. head lettuce, shredded fine (about 6 c.)
1 c. coarsely chopped celery
1 c. coarsely chopped green pepper
1 1/2 c. mayonnaise
1 c. cooked rice
2 tbsp. sugar
2 1/2 c. shredded cheese (cheddar or Velveeta)
Bacon bits

Arrange lettuce in bottom of bowl. In layers add celery, green pepper, 1 chopped onion (optional), and peas. Spread mayonnaise evenly over layer of peas. Sprinkle with sugar and cheese. Refrigerate at least 4 hours. Sprinkle with bacon bits and serve.
