GREEN BEANS AU GRATIN 
5 slices bacon
2 tbsp. flour
1 No. 2 can green beans or 2 1/2 c. cooked fresh green beans
1/2 c. milk
3/4 c. grated Sharp cheese
1/2 c. rolled Corn Flakes or bread crumbs mixed with 2 tbsp. butter, melted

Fry the bacon, until done, remove bacon to absorbent paper. Measure 3 tablespoons of fat and return to skillet. Add flour and stir until blended; then add liquid drained from beans; there should be about 7/8 cup. Add the milk and stir constantly over direct heat until sauce boils and thickens. Add beans and grated cheese. Turn into a buttered 6-cup casserole. Sprinkle with Corn Flake crumbs or bread crumbs and bake in a moderately slow oven (325 degrees) about 20 minutes or until crumbs brown. Two minutes before removing from oven, sprinkle with the chopped crisp bacon.
