CRABMEAT AU GRATIN 
1 lg. onion, chopped
1 c. green onions, chopped
3 ribs celery, chopped
1/2 lb. butter
4 tbsp. flour
2 sm. cans evaporated milk
2 egg yolks
2 lbs. white crab meat
10 oz. yellow cheese, grated
Salt & pepper to taste

Saute onion, celery and butter. Add flour and blend. Add milk and blend. Remove from heat, add egg yolks, crab meat, salt and pepper and cheese. Put in buttered casserole dish. Sprinkle with more cheese or bread crumbs if desired. Bake at 350 degrees for 20 minutes, covered, 10 more minutes, uncovered.
