CRABMEAT AU GRATIN 
1 stalk celery, chopped fine
1 c. onion, chopped fine
1/4 lb. butter
1/2 c. all-purpose flour
1 (13 oz.) can cream
2 egg yolks
1 tsp. salt
1/2 tsp. red pepper
1/4 tsp. black pepper
1 lb. crab meat
1/2 lb. grated cheddar cheese

Saute onions and celery in butter until wilted. Blend flour in well. Pour in cream gradually, stirring constantly. Add egg yolks, salt, red and black pepper; cook 5 minutes. Add crab meat; blend well. Transfer to a greased casserole dish and sprinkle with cheese. Bake at 375 degrees for 15 minutes until light brown. Serves 6.
