HAM 'N' POTATOES AU GRATIN 
1/4 cup Green Onions, chopped
2 tbsp. butter, divided
1 lb. Fully Cooked Ham, cubed
1 tbsp. Flour
3/4 cup Milk
1/4 cup Green Pepper, chopped
3 Cups Potatoes, cooked, peeled and diced
1/4 cup Mayonnaise
1/8 tsp. Pepper
1 cup Shredded Cheddar Cheese

In a skillet, sauté onions and green pepper in 1 tablespoon of butter until tender. Combine onions and pepper with potatoes, ham and mayonnaise; pour into an ungreased 9x13 baking dish. In a saucepan, melt remaining butter. Stir in flour and pepper until smooth. Gradually add milk and bring to a boil. Cook and stir for 1 minute. Stir in cheese just until melted and pour over potato mixture.

Cover and bake 350°F for 1 hour or until bubbly.
