POTATO BREAD 
3/4 c. milk
2 tbsp. sugar
2 tsp. salt
1 1/2 c. mashed potatoes (leftover)
3 tbsp. butter

Combine above ingredients and heat until butter is melted. 2 eggs

Dissolve yeast in 1/4 cup hot water in large bowl. Beat eggs and add to yeast mixture and cooled potato mixture. To this add 2 cups flour and beat until smooth. Add 2 more cups flour and mix well.

Turn out onto floured board and knead about 15 minutes. Shape into ball and let sit 20 minutes until double in bulk. Shape into two loaves. Let rise 2 hours in refrigerator or overnight. Bake at 400 degrees for 30 minutes.
