TABBOLEH (NATIONAL SALAD OR
LEBANON)
 
3/4 c. Bulgar wheat
3 1/2 c. boiling water
1/2 lg. finely chopped tomato
1/2 tsp. lemon juice
3 bunches parsley, finely chopped
1/2 c. finely chopped onion
1 tsp. olive oil or sesame oil

Place bulgar wheat in a bowl. Add boiling water. Cover and let soak for 1 to 3 hours, until wheat has expanded and is light and fluffy. Drain off the excess water and mix the bulgar wheat, parsley and onion, add tomato. Add lemon juice and oil, mix well and serve.
