TABBOULEH (LEBANESE SALAD) 
1 c. bulgur wheat
2 c. water
1/2 c. olive oil
1 bunch green onions
1/2 c. lemon juice
1 1/2 c. fresh parsley
1/2 c. mint leaves
1 tsp. salt
1 sliced tomato or 1/2 c. salsa

Soak bulgur in water until soft; 2 to 3 hours. Wash parsley and mint and chop fine. Cut onions into small pieces. Drain bulgur and combine with parsley, mint and onion. Stir in olive oil, lemon juice and salt. The tomato may be chopped and stirred in or sliced on top. If using salsa, mix in thoroughly. Serves 6 to 8.
