TABOULI - ZESTY LEBANESE SALAD 
1 can garbanzo beans, drained
1 1/4 c. bulgar wheat, raw
4 c. boiling water
1 1/2 c. minced parsley
3/4 c. minced scallions
3/4 c. mint (if not available, omit and add more parsley)
3 med. tomatoes, chopped
3/4 c. lemon juice
1/4 c. olive oil
1 - 2 tsp. salt (or less, or omit)
Freshly ground pepper

Two step salad. First, measure 4 cups water into pan. When it boils, add bulgar wheat and remove from burner. Let stand 2 hours until wheat is light and fluffy. Drain excess water. Add drained beans. Second, add remaining ingredients and refrigerate at least 1 hour. Serve over raw lettuce leaves.
