EASY PINEAPPLE COFFEE CAKE 
Drain a #2 can of crushed pineapple, saving 2/3 cup of the syrup. Thoroughly mix the syrup with 2 cups biscuit mix, 1 egg and 1/4 cup sugar. Pour into greased 8 or 9 inch square pan, cover top evenly with crushed pineapple. Sprinkle with 1/4 cup brown sugar and a little nutmeg or cinnamon. Bake at 400 degrees for 25-30 minutes.
