LOTTA LEMON MUFFINS 
1 3/4 c. flour
3/4 c. sugar
1 tbsp. grated lemon peel
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt

Make well in center. In another bowl, combine: 6 tbsp. butter, melted & cooled 1 egg, room temperature 1 tbsp. fresh lemon juice

Add to well; stir until just blended. Spoon into prepared muffin cups, fill each 3/4 full. Bake at 400 degrees for 15 to 20 minutes. Remove from pan. Puncture each muffin 6 to 8 times and drizzle with hot glaze.

GLAZE:

1/3 c. fresh lemon juice
1/4 c. sugar
1 tbsp. grated lemon peel

Cook until sugar dissolves.
