HONEY - LEMON MUFFINS 
1 c. flour
1/2 c. whole wheat flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 beaten egg
1/2 c. honey
1/2 tsp. finely shredded lemon peel
1/4 c. lemon juice
1/4 c. butter, melted

Line muffin cups with liners or spray with non-stick vegetable spray. Stir together flours, baking powder, soda and salt. Make a well in the center. Combine egg, honey, lemon peel and juice, and butter. Add all at once to flour mixture. Stir just until moistened. Fill cups 3/4 full. Bake in a 375 degree oven for 18 to 20 minutes. Remove from pans. Serve warm. Makes 10.
