CHICKEN RICE PYRAMIDS 
3 c. diced cooked chicken or turkey
1/2 c. celery, chopped
1/2 c. onion, chopped
1/2 c. walnuts, chopped
3 eggs, beaten
1 tsp. poultry seasoning
1 c. Cheddar cheese, shredded
1 tsp. chili powder
1/2 tsp. oregano
3 c. cooked rice

Combine ingredients in large mixing bowl. Chill for several hours. Form into 12 coned shaped mounds. Dip each one in melted butter, then in 1 cup crushed cornflake crumbs. Arrange the pyramids on large cookie sheet. Bake at 350 degrees for 30 minutes or until golden brown. Serves 6.
