CHUNKY CHICKEN CHILI 
1/2 c. chopped onion
2 tsp. vegetable oil
2 garlic cloves, minced
3/4 c. diced zucchini
3/4 c. green or red bell peppers
5 oz. skinned and boned chicken breasts, cut into 1/2 inch pieces
1 can tomato sauce, 15 oz.
2 oz. rinsed and drained red kidney beans
1 tsp. chili powder
Dash of salt and pepper
1 bag UNCLE BEN'S® boil in a bag rice (cooked)

In a pot combine onion, oil and garlic. Brown the chicken breasts with the above. Add the zucchini and red or green peppers until tender. Add remaining ingredients and stir to combine (except rice) then add the rice. Serves 2.
