TEX MEX CHICKEN FIESTA 
10 oz. can cream of chicken soup
3/4 c. cold water
2 tsp. chili powder (or dry taco mix)
2 c. minute rice
2 c. cooked turkey or chicken
1/4 c. diced red pepper
1/4 c. diced green pepper
4 oz. (1 c.) Monterey Jack cheese
4 oz. (1 c.) mild Cheddar cheese

Preheat oven to 350 degrees. Mix together soup, water, and chili powder and cook for 5 minutes over low heat. Add remaining ingredients except for 1/2 cup of each cheese. Spoon mixture into 10 x 6-inch baking dish. Top with remaining cheese. Bake 20-30 minutes. Let stand 5 minutes before serving. Garnish with sour cream or salsa. Serves 4-6.
