STUFFED FILET MIGNON 
3 lb. trimmed filet

STUFFING:

1/4 c. butter, melt and add:
1 med. onion, chopped
1/2 c. celery, diced
4 oz. mushrooms
2 c. soft bread crumbs
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. basil
1/8 tsp. parsley

Slice meat 3/4 of the way down. Top with strips of bacon. Bake for 1 hour at 350 degrees.
