SWEET POTATO BAKE 
1 1/2 c. corn flakes
3 lb. sweet potatoes or yams, boiled and peeled
5 tbsp. butter
1/4 c. orange juice
2 c. miniature marshmallows

You can use 2 (24 oz.) cans sweet potatoes, drained and mashed.

Preheat oven to 350 degrees. In a large bowl of electric mixer, combine sweet potatoes and 4 tablespoons of the butter and orange juice. Beat until smooth. Stir in 1 cup of the marshmallows. Spread in 6x10x2 inch glass baking dish. Top with remaining marshmallows.

Melt remaining butter. Combine with corn flakes. Sprinkle with marshmallows. Bake at 350 degrees for 30 minutes or until heated. Yields: 8 servings.
