FRUIT COCKTAIL CAKE 
1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 (16 oz.) can fruit cocktail
1 egg
1 tsp. vanilla

TOPPING:

1 c. dark brown sugar
1/2 c. nuts, chopped
Whipped cream

Sift the first 4 ingredients together. Drain fruit cocktail, reserve juice. Add egg and vanilla to this juice and mix with the dry ingredients. Fold in fruit and pour into greased 9 x 13 inch pan. Top with dark sugar and nut mixture. Bake at 350 degrees for 35 minutes. Serve with whipped cream/Cool Whip.
