COTTAGE CHEESE PANCAKES 
1 c. cottage cheese
4 eggs, lightly beaten
1/2 c. flour
6 tbsp. butter, melted
Pinch of salt
2 tsp. sugar

Heat griddle or pan over moderately high heat and brush it with some butter or spray with Pam. Ladle 2 tablespoons of batter onto griddle to form pancakes about 2 1/2 inches in diameter and cook for 2-3 minutes or until lightly browned. Turn and brown the other sides. Transfer to heated platter. These are light and very good!
