SPANAKOPITA 
1 frozen 8-inch pie shell
1 (10 oz.) frozen spinach
1 bunch chopped scallions
3 lightly beaten eggs
1 tbsp. dried parsley
1 tbsp. dried dill
2 tbsp. butter
1/4 tsp. salt
1/4 tsp. pepper
1/3 c. Mozzarella cheese

Saute scallion in butter. Mix butter and scallions with remaining ingredients and spread in pie shell. Bake at 350 degrees for 40-45 minutes. Check for doneness using clean knife test.
